This recipe is easy, fresh and great to make as a dip or a spread. Remember to pick ripe avocados that are easy to mash.

- 1 rip avocado
- 1/4 cup onion, finely chopped
- 1/4 cup tomatoes, diced
- 1 tbsp cilantro, finely chopped
- 1/2 lime, juiced
- salt to taste
Run your knife down the avocado from one end to the other. You will feel the pit in the center. Open the avocado. To take out the pit, hit it gently with the blade of your knife so it secures the pit. Pull the pit out. Hold half of the avocado in your palm. With a spoon, scoop out the flesh into a small bowl. Repeat with the other half.
Finely chop the onion, tomato and cilantro. Add to bowl. Mash the avocado with a fork and start incorporating all of the ingredients. Add the lime juice and mix. Add salt to taste. Serve with tortilla chips or use as a sandwich spread.
